Classic Apple Pie

Serves 8 · About 1 hr 30 min · Follow each step, one at a time.

1 Gather ingredients ▶
Have everything measured and ready before you start.
  • 2½ cups all-purpose flour + 1 tsp salt
  • 1 cup cold unsalted butter, cubed
  • 6–8 tbsp ice water
  • 6 large apples (Granny Smith or Honeycrisp), peeled & sliced
  • ¾ cup sugar + 2 tbsp flour + 1 tsp cinnamon
  • 1 egg (for the egg wash)
Tip: Cold butter and ice water are the secret to a flaky crust.
2 Make the dough ▶
Build a tender, flaky pastry base.
  1. Whisk together the flour and salt in a large bowl.
  2. Cut in the cold butter until the mixture looks like coarse crumbs.
  3. Add ice water one tablespoon at a time until the dough just holds together.
  4. Split into two discs, wrap, and chill for at least 1 hour.
3 Prepare the filling ▶
Coat the apples so they bake up sweet and saucy.
  1. Toss the sliced apples with the sugar, flour, and cinnamon.
  2. Add a squeeze of lemon juice to brighten the flavor.
  3. Let it sit 10 minutes so the juices start to release.
4 Assemble the pie ▶
Bring the crust and filling together.
  1. Roll out one dough disc and line a 9-inch pie dish.
  2. Pile in the apple filling, mounding it slightly in the center.
  3. Roll the second disc on top (or cut strips for a lattice) and seal the edges.
  4. Brush with beaten egg and cut a few slits to vent steam.
Tip: Sprinkle coarse sugar on top for a sparkly, crunchy finish.
5 Bake & cool ▶
The hardest part is waiting to slice it.
  1. Bake at 425°F (220°C) for 15 minutes.
  2. Reduce to 375°F (190°C) and bake 40–45 minutes more, until golden and bubbling.
  3. Cool at least 2 hours so the filling sets before slicing.
Serve warm with a scoop of vanilla ice cream. Enjoy!
